Delicious soya bean and soya milk recipes

Soy is so versatile and offers a healthy and tasty alternative to cow milk and wheat products!

You can make soups, fritters, pancakes, bread and pastry, tofu and yogurt – all out of soy!

Soy is a magic vegan product. There are no limits for its use.

1. Soya Bean recipes

Fried soybeans * salted soy nuts

  • Ingredients: 250 g soybeans, 1 large pan with water.
  • Cooking: Soak the beans in water overnight (around 12 hours). Pour away the water and place the beans in single layer on the baking tray. Bake the beans at the temperature 170º C for 20-30 minutes. Stir the beans every 5 minutes, so that they all become golden-brown colour. Add salt, pepper or curry powder at your taste.

Soybeans Bolognaise (12 portions)

  • Ingredients: 400 g dry soybeans, 1 large pan with water, 4 large tomatoes (cut in cubes), 1 large onion (minced), 120 g green olives, 120 g black olives, 2 cans tomato paste, 3 cans (450 g) peeled tomatoes, 160 g Parmesan cheese powder, 200 ml red wine, 60-80 ml olive oil, 1 can corn, 2 table spoon dry oregano, 2 table spoon dry basil, 4 table spoon Italian herbs at your taste, salt, pepper.
  • Cooking: Soak the beans in water overnight (around 12 hours). Pour away the water. Mince all ingredients (except for tomato cubes) in a mixer. Now add tomato cubes and simmer in a pan for a few hours. Stir once in a while.

Sotanghon noodle soup (Philippine)

  • Ingredients: 20 g dry Chinese mushrooms, 1 small package Sotanghon (soybean noodles), 180 ml water, 6 garlic cloves (pressed), 2 table spoon oil, half onion (minced), 400 g tofu (cut in cubes and breaded), salt, pepper, 120 g peas.
  • Cooking: Soak mushrooms and beans in water (separately) until they get soft. Fry garlic in oil and put aside. Fry onions and tofu, add salt and pepper. Add water, bring to the boiling point and cook for 10 minutes. Add soybean noodles and mushrooms and cook 5-10 minutes more. Then add peas and garlic and cook 5 minutes more.

Soybean soup

  • Ingredients : 350 g soy beans, 2 table spoon Melissa, 2 TS brown sugar, juice from one lemon, salt, 1 can tomato puree, 1 middle onion, 2 TS oil.
  • Cooking: Soak the beans in water overnight (around 12 hours). Pour away the water. Mix all the ingredients together (except for onion). Place the onion in the middle of a backing form. Pour in the bean soup. Put the form in the oven (middle) and cook for 1 hour.
 

2. Soya Milk recipes

Apple pancake

  • Ingredients: 250 g spelt flour, 3 table spoon soy flour, 0,5 tea spoon backing powder, 1 small package vanilla sugar, salt, 1 TS sugar, 250 ml soy milk 1 kg sour apples.
  • Cooking : Prepare dough from all ingredients except for apples. Cut apples into small pieces and add to the dough. Fry in a frying pan till golden-brown on both sides.

Soy muffins with blueberries

  • Ingredients: 350 g spelt flour, 120 g corn flour, 15 g backing powder, salt, 240 ml soy milk, 80 ml maple syrup, 240 g blueberries.
  • Cooking: Mix all ingredients and make the dough, add blueberries. Bake the muffins in greased forms for 20-25 minutes at 180º C.

Chocolate cake

  • Ingredients: 70 ml oil, 100 ml water, 220 ml soy milk, 1 table spoon vinegar, 1 tea spoon vanilla powder, 250 g sugar, 300 g spelt flour, 150 g cacao, 2 tea spoon baking powder, salt.
  • Cooking: Heat the oven till 175º C. Mix the soy milk with vinegar. Add oil, water, vanilla powder and sugar. Sieve over the flour, cacao, baking powder and salt and mix all to make dough. Put the dough in a greased form and bake for 30 minutes.

Cheese cake

  • Ingredients: Dough: 180 g vegetable margarine, 125 g sugar, 1 table spoon soy flour, 75 ml water, 1 small package baking powder, 300 g spelt flour.
    Filling: 500 g tofu, 720 g soy yogurt (not sweetened), 200 g sugar, 20 g corn starch, 1 small package vanilla pudding powder.
  • Cooking: Dough. Soften margarine and add sugar, soy flour, water, baking powder, spelt flour. Knead well and put the dough aside for half an hour. Then roll out the dough and place in a greased form (25 cm diameter). Make sure the borders are raised for 3-4 cm. Make sure the bottom of the cake is thick enough, otherwise it can easily break when you take it out of the form.
    Filling: Puree tofu in a mixer. Add part of soy milk to starch and pudding powder and mix in. Add soy yogurt, sugar and remaining soy milk to tofu puree and mix well, eventually in a mixer. Now place
