Alkaline Recipe #54 Tomato, Rice & Cumin Soup

Hey gang

This is a new one for me and it is DELICIOUS. It is so quick and easy too. The cumin is so delicious combined with the tomato and the rice adds a wicked texture. It is filling and warming on a cold winter’s day.

Tomato, Rice & Cumin Soup

Serves 2

Tomato Cumin Soup
Ingredients

?½ medium onion
2 garlic cloves, crushed
1 tsp of coconut oil
1 tsp ground cumin
85g brown basmati rice or wild rice
2 tins of chopped tomatoes
290ml yeast free vegetable stock
small bunch parsley, chopped
sea salt and ground black pepper
4 tbsp olive oil

Instructions

Cook the brown rice as per the instructions on the packet. When this has nearly finished cooking, chop all of the vegetables as per the instructions above and then lightly sautee the garlic and onion (but don’t let anything go brown!) in a large saucepan.

Now throw in the cumin and tomatoes, rice and stock and cook for another 6-8 minutes. Season to taste, add the parsley, serve in nice big bowls and drizzle with olive oil!

How much or many are 2 tins of tomatoes? Love the recipe.
