This is a really healthy and alkaline salad using a variety of sprouts.
Sprouts are super healthy and are highly alkalising foods. They are extremely rich in digestible energy, bioavailable vitamins, minerals, amino acids, proteins, beneficial enzymes and phytochemicals.
I absolutely love eating sprouts as they are so versatile and I try to integrate them into lots of different dishes like stir fries, salads, wraps, etc.
This is a great salad, as it is easy and quick to make and very tasty!
Mixed Sprouts Salad
Serves 2
Ingredients
A mixture of sprouts of your choice (e.g. china rose radish, alfalfa and cress)
1 cucumber
1 spring onion
A handful of fresh chives, dill and parsley
1 or 2 tbsp coconut oil or Udo’s Choice Ultimate Oil Blend
Fresh juice of half a lemon
Himalayan Crystal Salt or Celtic Sea Salt
Freshly ground black pepper
Instructions
Chop up all the herbs into small pieces. Prepare a dressing out of the herbs, oil, lemon juice, salt and pepper.
Cut the spring onion and cucumber into small pieces and add to the dressing.
Wash and drain the sprouts and mix them with the dressing.
Enjoy!
