I am a big believer in ALWAYS having a side salad with meals. It’s a sneaky, easy way to get a mammoth amount more green foods into your daily diet – which is ALWAYS a good thing.
It’s remarkable how little green foods most people get in a day, so even if you are one of those people, you can now get 5-6 ‘serves’ of greens into your body every day with very little effort.
Rocket, Watercress & Mint Salad
Ingredients
100g rocket (also known as arugula)
100g watercress
100g chickpeas
1/2 bunch of fresh mint
2tbsp of olive oil
2tbsp fresh lemon juice
Himalayan salt and ground pepper
Instructions
Wash the leaves and dry them. Arrange them in a bowl and toss through the chickpeas. Sprinkle the mint on top and then add the dressing, salt and pepper and enjoy!
