This is another one of my favourite and quick dishes from North Africa using courgettes and a variety of Moroccan spices.
The combination of garlic and onion with chilli, paprika and cumin gives the courgettes a deliciously spicy flavour.
Courgettes, the main stars of this dish, do not only taste good but are also extremely healthy as they are packed with folate, potassium, vitamin A and manganese.

This dish contains two of my favourite types of vegetables: peppers and tomatoes.
Peppers and tomatoes are packed with nutrients and are a good source of Vitamin K, Thiamin, Riboflavin, Niacin, Potassium and Manganese, and are a very good source of Dietary Fiber, Vitamin A, Vitamin C, Vitamin E, Vitamin B6 and Folate.
Both vegetables make great containers for various vegetable stuffings and this version uses typically Greek ingredients.
Feel free to vary this dish by using small aubergines or large courgettes, which also make good vegetables for stuffing.

In these lingering arctic temperatures and snowy conditions, this is the perfect soup to warm you up nicely!
Ribollita is a famous soup from Tuscany in Italy and like many dishes from this region it has got peasant origins. The word Ribollita literally means “reboiled”, as it was originally made by reheating the leftover vegetable soup from the previous day.
The core ingredients of this Tuscan soup are green vegetables and beans, which make this soup not only delicious but also highly nutritious and alkaline!
Enjoy!

This is another light and tasty dish containing one of the healthiest vegetables on earth – spinach!
This week we thought it is a good idea to feature another recipe with spinach as the main ingredient, as we have written an article about alkaline-mineral rich foods and spinach tops every other vegetable!
Spinach is an excellent source of all the primary alkaline minerals magnesium, potassium, iron, manganese and iron.
So enjoy and take in all the goodness of this superfood!

This is a wonderful recipe which contains three of my favourite ingredients – Okra, Coriander and Tomatoes.
Okra is often combined with tomatoes and mild spices in various parts of the Mediterranean and is also an integral part of Indian, Middle Eastern, Caribbean and southern US cuisine.
Okra is not yet popular and widely known in the UK, so if you have not cooked with it yet then I can really recommend to give this delicious dish a try – you might discover a new vegetable favourite!

This is one of my favourite dishes, as it is very wholesome, delicious and alkaline at the same time.
Lentils are not only delicious but are also packed with high levels of proteins and contain dietary fiber, folate, Vitamin B1, and minerals. Apart from that they are also one of the best vegetable sources of iron.
This dish makes a great main course or accompaniment with healthy fish like salmon.
Just try it and enjoy!

This is a wonderful salad filled with surprisingly delightful textures and flavours and has become one of my favourites in the past few weeks. Even though it is snowing where most of you are, this will bring some summer to your table!
The genius of serving it in a tortilla bowl is just, quite frankly, mindblowing. I love it! It is an idea I stole while I was on a cruise the other week (random, I know – but it was the cheapest way to get from Europe to the States – I actually MADE money!) and since then I’ve tried it a few times and loved it more each time.
