<p>So how to make it even better?  Combine it with chickpeas to get an extra hit of fibre and protein and voila &#8211; this snack is even more perfect than perfect!  </p>
<p>I know that you guys often want me to give you an alkaline diet recipe that is a snack as well and this is a great one!</p>
<p>Enjoy with veggie sticks, dehydrated crackers, sprouted bread or with your salads for the perfect (filling) alkaline snack.</p>
<h2>Chickpea and Avocado Mash</h2>
<p><em>Serves 2-3</em></p>
<p><b>Ingredients</b></p>
<p>    1 can chickpeas, drained or equivalent weight of organic dried chickpeas (garbanzos) cooked as per guidelines<br />
    1 ripe avocado<br />
    Himalayan salt &#038; cracked black pepper<br />
    Drizzle of flax oil<br />
    Pinch of cumin<br />
    Optional: herbs of your choice &#8211; coriander, basil, parsley</p>
<p><b>Instructions</b></p>
<p>In a bowl, mix together chickpeas, avocado chunks, salt &#038; pepper along with the cumin and the optional herbs.  With a potato masher or large fork, mash together leaving some whole chickpeas.</p>
<p>Drizzle with the flax oil, add a dusting of paprika if you like it fancy and serve!</p>
<p>I also love to put this in my veggie &#038; salad wraps &#8211; gives it more substance.</p>

<p>Quinoa is known for being a complete protein and perfect of course, for vegetarians/vegans. It is also a good source of the very alkaline mineral &#8211; magnesium. Combine this with Sweet potato which is much more alkaline than normal potato (and much more delicious) while also being an anti-oxidant, anti-inflammatory and a good blood sugar regulator.  All these are packed with nutrients and definitely something to try. </p>
<h2>Alkaline Coconut Quinoa and Sweet Potato Curry</h2>
<p><em>Serves 4-5</em></p>
<p><b>Ingredients</b></p>
<p>    1 can chickpeas drained<br />
    1/2 cup dry quinoa<br />
    1 medium-large sweet potato, peeled and cubed<br />
    1/2 medium onion, chopped<br />
    2 to 3 cloves garlic, minced<br />
    2 to 3 tablespoons coconut oil<br />
    1 teaspoon coriander<br />
    1 teaspoon cumin<br />
    1 teaspoon turmeric<br />
    3/4 teaspoon garlic powder<br />
    1/2 teaspoon cayenne<br />
    1/8 teaspoon cardamon<br />
    1/8 teaspoon ginger<br />
    salt, to taste<br />
    pepper to taste<br />
    1 can coconut milk</p>
<p><b>Instructions</b></p>
<p>1. Prepare quinoa, chickpeas, and sweet potatoes.  In a saucepan, add chickpeas, quinoa and 300ml of water. Heat over medium-high heat to bring chickpea liquid to a boil. Cover with a tight-fitting lid and reduce heat; simmer for 15 minutes, or until quinoa and chickpeas have softened.  Now steam the sweet potato until it is tender (about 15 mins). </p>
<p>2. In a skillet/pan, heat coconut oil over medium heat. Add onion and garlic and saute until the onion is translucent.</p>
<p>3. Add all of the spices (coriander, cumin, turmeric, garlic powder, cayenne pepper, cardamon, ginger, salt, and pepper).</p>
<p>3. Add the chickpea-quinoa-sweet potato mixture to the skillet.</p>
<p>4. Add coconut milk</p>
<p>5. Mix well and allow to boil over high heat. Reduce to low heat, cover, and simmer for 10 to 15 minutes, stirring every few minutes, until the milk has condensed into a nice curry.</p>
<p>No rice needed as quinoa provides this taste and texture, while being much better for you.  Quinoa is actually a grass, not a grain so is much more alkalising!</p>

And rather brilliantly, the combination of complex carbs, fibre and protein means that quinoa will leave you with heaps of sustained energy and you will feel full right up until lunch.</p>
<h2>Quinoa &#038; Apple Breakfast Warmer</h2>
<p><em>Serves 2</em></p>
<p><b>Ingredients</b></p>
<p>½ cup of quinoa<br />
1 apple<br />
½ lemon<br />
Cinnamon</p>
<p>Optional: raisins</p>
<p><b>Instructions</b></p>
<p>Cook the quinoa according to the packet instructions, but this is generally to rinse the quinoa in a sieve and then add 50% more water than quinoa i.e. for 1 cup of quinoa you’d add 1.5 cups of water.  Then bring to the boil and simmer for 15 minutes.</p>
<p>As you’re reaching the end of the 15 minutes, grate the apple in and cook for a further 30 seconds, grate in the zest of the lemon and squeeze a little lemon in to taste.  Now serve in bowls with a sprinkle of cinnamon and voila!  Delicious and warming. </p>
<p>Note: if you want to add raisins (and I only recommend this while transitioning) then throw them in just before you grate in the apple.</p>

<p>As I am doing a special on juicers to my newsletter subscribers (<a href="http://www.energiseforlife.com/energise-newsletter.html">sign up here for discounts</a>, I send out some neat alkaline diet discounts every single Wednesday) I thought it might be a nice idea to send out my latest, big bad (ass) green drink I&#8217;ve been making for myself in recent weeks.</p>
<p>I&#8217;ve discovered a little organic shop right near where I live that has opened my eyes to some brilliantly dark-green leafy veggies that I&#8217;m now incorporating into my green juice each morning.  </p>
<p>So here it is: <b>Ross&#8217;s Bad-Ass Greens</b><br />
<em>Serves 2</em></p>
<p><b>Ingredients</b></p>
<p>One stalk of kale (or a handful if you buy it off the stalk)<br />
4 sticks of chard<br />
2 handfuls of baby spinach leaves<br />
2 sticks of celery<br />
1 (1/2 if its a biggie) cucumber<br />
5 broccoli florets<br />
1 inch of raw root ginger</p>
<p><b>Instructions</b></p>
<p>Juice it all through your juicer, putting the ginger in with something that is high-water such as the cucumber.  Enjoy immediately and feel the buzz!</p>

<h2>Tomato, Rice &#038; Cumin Soup</h2>
<p><em>Serves 2</em></p>

<b>Ingredients</b></p>
<p>?½ medium onion<br />
2 garlic cloves, crushed<br />
1 tsp of coconut oil<br />
1 tsp ground cumin<br />
85g brown basmati rice or wild rice<br />
2 tins of chopped tomatoes<br />
290ml yeast free vegetable stock<br />
small bunch parsley, chopped<br />
sea salt and ground black pepper<br />
4 tbsp olive oil</p>
<p><b>Instructions</b></p>
<p>Cook the brown rice as per the instructions on the packet. When this has nearly finished cooking, chop all of the vegetables as per the instructions above and then lightly sautee the garlic and onion (but don’t let anything go brown!) in a large saucepan.</p>
<p>Now throw in the cumin and tomatoes, rice and stock and cook for another 6-8 minutes.  Season to taste, add the parsley, serve in nice big bowls and drizzle with olive oil!</p>
