<p>p.s. note: the use of Miso here is purely as a flavour, as you know my belief is that Miso (being fermented) is not especially alkaline and if you want to substitute you can use Bragg or any other herb/flavouring you like &#8211; or you can simply remove it.</p>
<p><b>No dehydrator?</b></p>
<p>Note:  in case you don&#8217;t have a dehydrator, Chef Sal recommends:</p>
<p>1. Probably the best way is to quickly flash saute them in a pan on a stove or a hot plate. You can flavor the zucchini strips in the oil and seasonings before you put them into the pan. Just lay them in a medium-high heated pan for about 10 seconds, turn them over for another 10 seconds and remove.</p>
<p>2. Or&#8211;blanch quickly in boiling water to make zucchini strips pliable, then IMMEDIATELY put into ice water to shock to prevent further cooking. Dry them. Only problem here is that the zucchini has no taste, so you have to flavor them by putting them in a mixture of oil, garlic powder and sea salt. Let them absorb the flavoring for a bit. Pat them dry before moving on to the next step.</p>
<p>3. Another way&#8211;but not the best&#8211;is to put them into the oven at the LOWEST setting that the oven will allow (dehydrator is from 105 to 110 degrs. &#8230; my oven will go down only to 170 degrs&#8230;) and watch the timing to get the zucchini strips to aldente&#8230; no more. You can&#8217;t leave the strips in the oven very long. With this method you can also season ahead of time. </p>
<p>However, you will lose a major portion of the enzymes with any of these methods. </p>
<p>I noticed you specifically asked about the zucchini&#8230; these methods may be the same for other items as well, but we&#8217;ll have to figure it out. It really is the matter of enzyme retention that we&#8217;re talking about. </p>
<p>Of course, the recipe still works with a completely cooked zucchini strip for those that prefer them cooked!</p>

<h2>Lettuce Tacos</h2>
<p><em>Serves 5-6</em></p>
<p><b>Ingredients</b></p>
<p>    3/4 cups chopped cashew nuts<br />
    1 1/2 cups chopped celery<br />
    4 to 5 tablespoons sesame garlic sauce or tahini<br />
    1 head of lettuce<br />
    coconut oil<br />
    chopped ginger<br />
    minced onions<br />
    minced garlic</p>
<p><b>Instructions</b></p>
<p>Before cooking, chop the celery into small pieces, and crush cashews so that each cashew is broken into about 4 pieces.  Perfection not required, just smash &#8216;em up a little.</p>
<p>Next, add a little coconut oil and a little water to a frying pan and sprinkle the oil with the freshly minced onions, minced garlic, and chopped ginger.</p>
<p>Pour chopped celery in and steam/fry for about 10 or 15 minutes on medium to high heat.</p>
<p>Now add the chopped cashews fry for a further 3 to 4 minutes on low to medium heat. Once it&#8217;s all looking awesome, remove from heat and mix the sauce/tahini in evenly with celery and cashews.</p>
<p>Prepare each serving inside a single large lettuce leaf and enjoy.  WARNING: it will get messy, so come to terms with this and make the decision to love it &#8211; the messier the better <img src='http://www.energiseforlife.com/wordpress/wp-includes/images/smilies/icon_smile.gif' alt=':)' class='wp-smiley' /> </p>

<p>It is full of fiber is really helpful in helping to cleanse through the digestive system and it all helps to satiate and keep us fuller for longer. It helps us detoxifies and acts like a sweep that cleanses out body. </p>
<p>This is a great example of doing something a little bit funky with your food to make alkaline meals more enjoyable <img src='http://www.energiseforlife.com/wordpress/wp-includes/images/smilies/icon_smile.gif' alt=':)' class='wp-smiley' /> </p>
<h2>Coconut Scented Rice with Toasted Almonds</h2>
<p><em>Serves 2</em></p>
<p><b>Ingredients</b></p>
<p>    1 cup brown rice, rinsed<br />
    2 cups organic coconut milk<br />
    1/4 cup shredded coconut, optional<br />
    1/4 cup almonds chopped finely<br />
    3 sprigs of fresh mint, finely chopped</p>
<p><b>Instructions</b></p>
<p>1. Preheat oven to 350 degrees F. Place rice, coconut milk and shredded coconut in a saucepan. Stir briefly. </p>
<p>2. Place saucepan over high heat and bring to a boil. Cover with a tight fitting lid then lower heat to a simmer. Cook rice for about 25 minutes. After that, check the rice periodically to see if it is tender.</p>
<p>3. While the rice is cooking, place the slivered almonds on a sheet pan and bake for 5-7 minutes or until toasty brown and fragrant.</p>
<p>4. When the rice is cooked to your desired tenderness, fluff it with a fork and sprinkle in about 1/2 the almonds. Add the rest of the almonds to the top of the rice, to serve along with the mint.</p>

<p>Most people don&#8217;t realise that chickpeas are also pretty darn healthy, and are full of fibre &#8211; which makes them great for digestion, as well as manganese (an alkaline mineral), folate and importantly for all your gym-going-athletes out there &#8211; protein. </p>
<h2>Alkaline chickpea korma with brown rice</h2>
<p><em>Serves 2</em></p>
<p><b>Ingredients</b></p>
<p>1 tbsp coconut oil<br />
1 large onion, finely chopped<br />
1 garlic clove, finely chopped<br />
1 tsp curry powder<br />
1 tsp ground cumin<br />
1 tsp ground coriander<br />
1 tsp turmeric<br />
2 tsp ginger<br />
1 tsp garam masala<br />
50g coconut cream<br />
1 tin of chickpeas (or equiv weight of dried and prepared chickpeas)<br />
2 carrots, sliced<br />
half a cauliflower, cut into florets<br />
1 tbsp arrowroot dissolved in 1 tbsp water<br />
1 tbsp chopped coriander<br />
2 cups of brown rice</p>
<p><b>Instructions</b></p>
<p>Rinse the rice and put in a pan with twice the amount of water. Bring to the boil, turn down the heat and simmer with the lid on until all the water is absorbed (about 40 minutes). </p>
<p>Heat the coconut oil in a large saucepan and add the onion and garlic. Cook them until they soften. Add the spices, except the garam masala, and cook for a few more minutes. </p>
<p>Add the carrots and cauliflower and cook for a few minutes, coating them in the spices. Dissolve the creamed coconut in 2 cups of boiling water and add it to the pan with the drained and rinsed chickpeas. Cook for 10 minutes until the vegetables are cooked through. </p>
<p>Add the arrowroot mixture and cook until the mixture thickens. Add the fresh coriander just before serving. </p>

<h2>Tofu Brazil Nut Steam Fry</h2>
<p><em>Serves 2</em></p>
<p><b>Ingredients</b><br />
2 leeks, washed, trimmed and finely sliced<br />
1 tsp tamari sauce<br />
2 carrots, trimmed, peeled and cut into fine matchsticks<br />
225g block firm tofu, cut into cubes<br />
100g baby corn, halved lengthways<br />
3 celery stalks, trimmed and sliced<br />
3-4 tbsp chopped brazil nuts<br />
1 tsp sesame oil<br />
1 tsp orange rind<br />
Juice of 1/2 a fresh lime</p>
<p><b>Instructions</b></p>
<p>Heat a large wok, add a little water and then the leeks and tamari. Steam fry for a few minutes then add the carrots, tofu and sweetcorn. Cook for a further 5 minutes. </p>
<p>Add the celery, brazil nuts, sesame oil and orange rind. Serve immediately on a bed of salad leaves and squeeze over the lime.</p>
<p>For extra zing you can add some chilli and if you like a soy-sauce taste I recommend Bragg Liquid Aminos which you can find at Energise.</p>

I wish I had discovered how much I love it a lot earlier, especially now I know how good it is for you!  </p>
<p>Tumeric has long been used in Indian cuisine (it’s the colour that stains you, your clothes, your mouth, your kitchen etc! – I’ve lost many shirts to the tumeric glow!) – but tumeric is also a wonderfully healthy spice that I have recently incorporated heavily in my cooking.</p>
<p>In fact, it is featured quite a bit in my <a href="http://www.energiseforlife.com/Alkaline-Diet-Recipe-Book.html">Alkaline Diet Recipe Book</a> &#038; I will be using it even more now!</p>
<h2>Tumeric will make you glow!</h2>
<p>Officially named Curcuma longa, tumeric is being hailed as a strong weapon in the fight against rheumatoid arthritis, protection against cancer and a whole lot more.</p>
<p>Traditionally it has been used as a digestive aid and for the treatment of fever, infections, arthritis, jaundice and other liver problems.  It&#8217;s fantastic for the liver!  In a pure cooking sense, it is of course delicious and is responsible for giving curries that vibrant yellow colour that is so hard to get out of clothes! </p>
<h2>Why Is It Healthy?</h2>
<p>Tumeric is a rich source of beneficial phenolic compounds that are known as curcuminoids.  The beneficial health effects of eating lots of cumeric are:</p>
<p><b>Antioxidant-Rich:</b> curcuminoids have powerful antioxidant properties, meaning that tumeric can not only scavenge and neutralise free radicals, but also prevent the formation of free radicals at all!  </p>
<p><b>Antiviral:</b> recent research has shown that the antioxidant and antimicrobial capacities of tumeric can be a powerful weapon against many viruses.</p>
<p><b>Anti-Inflammatory:</b> clinical trials have shown tumeric to inhibit the molecules that are involved in inflammation.  This is related to the antioxidant content of tumeric.  Further research has also demonstrated that tumeric can have significant benefits for sufferers of rheumatoid arthritis, with a study in the <a href="http://www.ncbi.nlm.nih.gov/pubmed/3546166">International Journal of Clinical Pharmacology and Therapeutic Toxicology</a> showing that tumeric showed similar effects, comparable to using commonly prescribed drugs such as cortisone.  </p>
<p><b>Anti-Cancer:</b> <a href="http://www.eurekalert.org/pub_releases/2006-08/jhmi-cic073106.php">a recent trial</a> has found that tumeric may reduce the size and number of pre-cancerous growth in the intestinal tract, thus reducing the risk of colon cancer.  </p>
