Alkaline Diet Recipe #89: Tunisian Chickpea Soup

by Ross on September 22, 2010

Tunisian Chickpea SoupThis warming and alkalising chickpea soup has got delicious arabic flavours given by spices like cumin and coriander.

Chickpeas are a very versatile type of pulse, which are used for a wide variety of dishes like stews. They are also highly nutritious and are a good source of protein, folate and zinc. They are also high in dietary fiber and low in fat.

I really like the smooth texture and oriental flavours in this alkalising chickpea soup, which are complemented by other ingredients like garlic, carrots, onions and celery.

Raw Avocado SoupIf you are a fan of raw soups like the Spanish Gazpacho you will love this delicious raw avocado soup with tomatoes and fresh spinach!

Avocados are incredibly healthy and alkalising and provide our bodies with six times more energy than sugar and proteins. They are rich in potassium, B vitamins, as well as vitamin E and vitamin K.

The avocados combined with the other highly alkalising vegetables like spinach and tomatoes make this soup very tasty and refreshing.

Green Juices Recipe by Gareth Edwards

by Ross on May 5, 2010

Gareth's green juiceThis is a delicious and ultra healthy green juice recipe from Gareth Edwards, our Dr Young trained blood analyst and highly qualified nutritionist.

The best vegetables to juice are the low glaecemic, greens. Cucumber and celery yield high quantities of liquid, while chard, kale, watercress, spring greens and spinach are more concentrated.

In case this sounds challenging in the flavour department, adding lemon juice makes it all highly palatable (usually!).

Gareth’s Green Juice

Ingredients

15-20 cm organic cucumber
3 sticks organic celery
6 leaves of organic chard
½ squeezed organic (un-waxed) lemon – juiced separately on a citrus squeezer and added afterwards.

Kohlrabi Salad with Vegetable DressingNow that the temperatures are steadily rising and the sun shows itelf more often, I love to eat more healthy salads.

I always look out for ways of creating different salads to keep it interesting and whilst doing this, I have come across this recipe using Kohlrabi and a Vegetable Dressing, which I think is delicious. I have eaten this salad in Germany where I come from and where Kohlrabi is widely used.

A Kohlrabi looks a bit like an alien life form, but has been deliberately developed in Northern Europe during the 16th Century. It has a mild flavour and has the ability to absorb the flavour of other ingredients in a meal.

Carrot and Artichoke SoupThis soup is made of jerusalem artichokes and carrots, which give it a smooth texture and a very earthy taste.

The jerusalem artichoke is one of the lessser known vegetables around, which is a shame as it has a unique nutty, sweet and crunchy taste and is a very good source of iron.

Did you know that the jerusalem artichoke is not truly an artichoke but a variety of sunflower and has nothing to do with Jerusalem, but is derived instead from the Italian word for sunflower, girasole?

Ribollita SoupIn these lingering arctic temperatures and snowy conditions, this is the perfect soup to warm you up nicely!

Ribollita is a famous soup from Tuscany in Italy and like many dishes from this region it has got peasant origins. The word Ribollita literally means “reboiled”, as it was originally made by reheating the leftover vegetable soup from the previous day.

The core ingredients of this Tuscan soup are green vegetables and beans, which make this soup not only delicious but also highly nutritious and alkaline!

Enjoy!
