Quinoa Salad with AvocadoThis is an alkalising quinoa salad with avocado, which is not only healthy but also highly delicious.

Quinoa is an ancient “grain” from South America, which was once called “the gold of the Incas”, who believed that due to its nutritional benefits it increases the stamina of their warriors.

Quinoa is very high in “complete” protein, which means that it includes all nine essential amino acids. In addition to protein, it is also packed with other valuable nutrients like manganese, iron, magnesium, copper and phosphorus.

Romanesco Cauliflower CurryThis is a delicious and alkaline vegetable curry with an abundance of oriental flavours.

In my weekly organic vegetable box I recently received a romanesco cauliflower for the first time. I was absolutely amazed by the beautiful looks of it, which looks more like a piece of art than a vegetable. I was even more impressed by its flavours, which is somewhere between a cauliflower and broccoli.

The romanesco cauliflower is part of the brassica family and is low in fat, high in dietary fiber, water, folate, vitamin C and several phytochemicals which are beneficial to human health.

Autumn Pumpkin StewThis week I continue the theme of using pumpkins and seasonal vegetables in our weekly alkaline recipe, as I believe in the importance of eating seasonal foods and particularly pumpkins are at their best in the autumn months.

This is a delicious pumpkin stew which contains other healthy and alkaline vegetables like carrots, pumpkins, new potatoes, onions and garlic which are all packed with a wide range of nutrients.

The word pumpkin originates from the word “pepon”, which is Greek for “large melon”. They are available in various shapes and sizes and they are a great source of vitamin C, potassium, vitamin A, dietary fiber and manganese and are a good source of folate and omega 3 fatty acids.

Courgettes with Moroccan SpicesThis is another one of my favourite and quick dishes from North Africa using courgettes and a variety of Moroccan spices.

The combination of garlic and onion with chilli, paprika and cumin gives the courgettes a deliciously spicy flavour.

Courgettes, the main stars of this dish, do not only taste good but are also extremely healthy as they are packed with folate, potassium, vitamin A and manganese.

Courgettes with Moroccan Spices

Serves 4

Ingredients

500g courgettes
freshly squeezed lemon juice from 1 lemon
Chopped fresh coriander and parsley, to serve

Stuffed Peppers and TomatoesThis dish contains two of my favourite types of vegetables: peppers and tomatoes.

Peppers and tomatoes are packed with nutrients and are a good source of Vitamin K, Thiamin, Riboflavin, Niacin, Potassium and Manganese, and are a very good source of Dietary Fiber, Vitamin A, Vitamin C, Vitamin E, Vitamin B6 and Folate.

Both vegetables make great containers for various vegetable stuffings and this version uses typically Greek ingredients.

Feel free to vary this dish by using small aubergines or large courgettes, which also make good vegetables for stuffing.
