<p><a href="http://en.wikipedia.org/wiki/Salmon">Salmon</a> is my favourite type of fish and this recipe has got an abundance of different flavours given by the Asian herbs and spices used as a marinade. <a href="http://en.wikipedia.org/wiki/Salmon">Salmon</a> is a particularly good &#8220;oily&#8221; type of fish to use, as it is high in protein, Vitamin D and most importantly the <a href="http://en.wikipedia.org/wiki/Omega-3_fatty_acid">Omega-3 fatty acids</a>. These are essential for good health and should be included as much as possible on the acid/alkaline diet. </p>
<p>I hope you enjoy this delicious and flavoursome recipe, which is perfect if you want to make your Christmas meal more alkaline and this little bit more special at the same time!</p>
<p><b>Please note: If you want to use this recipe on a particular day you need to prepare this dish two days before, as the marinade needs to soak into the fish.</b> </p>
<h2>Marinated Salmon Fillet Asian Style</h2>
<p><em>Serves 4</em></p>
<p><b>Ingredients</b></p>
<p>800g salmon fillet with skin<br />
30g fresh coriander<br />
2 red chillies<br />
1 tbsp black peppercorns<br />
50g fresh ginger<br />
2 lemongrass stalks<br />
Fresh lime peel from 4 organic/unwaxed limes<br />
2 tbsp Bragg&#8217;s Liquid Aminos<br />
20g Himalayan Crystal Salt or Celtic Sea Salt<br />
1 tbsp oyster sauce<br />
1 handful of sesame seeds</p>
<p><b>Instructions</b></p>
<p>For the marinade wash the coriander, drain it and hack it into fine pieces. Crush the peppercorns in a mortar, wash the chillies, halve and deseed them and cut into fine pieces. </p>
<p>Wash the lemongrass and cut into thin slices. Wash the ginger and cut into small dices. </p>
<p>Mix the coriander with the lime peel, ginger, lemongrass, pepper, chilli, salt, oyster and Bragg&#8217;s Liquid Aminos.</p>
<p>Lay the salmon fillet skin side down into a form which the salmon fits in and spread the marinade evenly over the salmon filet. Cover the salmon with cling film and let the marinade soak in for two days in the fridge. </p>
<p>Roast the sesame seeds in a frying pan without any fat until they turn golden. Remove the whole marinade from the salmon fillet after two days and sprinkle the sesame seeds onto the salmon. </p>
<p>To serve cut the salmon into thin slices. </p>

<h2>Kale Chickpea Mash</h2>
<p><em>Serves 2 as a main dish</em><br />
<em>Serves 4 as a side dish</em></p>
<p><b>Ingredients</b></p>
<p>3 tbsp garlic, cut into small pieces<br />
1 shallot, cut into small pieces<br />
1 bunch kale<br />
400g fresh chickpeas (cooked per instructions)<br />
2 tbsp Bragg Liquid Aminos (alternative: soy sauce)<br />
2 tbsp extra virgin olive oil or coconut oil<br />
1/2 tsp of fresh or dried thyme<br />
Celtic sea salt or Himalayan crystal salt, to taste</p>
<p><b>Instructions</b></p>
<p>Gently fry the shallot and minced garlic in olive oil on medium-high heat until it turns golden brown. Be careful not to burn it, as the garlic becomes bitter tasting otherwise. </p>
<p>Add the washed and drained kale and stir in the oil, onion and garlic. After the kale has wilted a bit, add the chick peas and cook for about 6 minutes. </p>
<p>Add the remaining ingredients and stir. Begin mashing the chickpeas with a fork. You can mash them as fine as you like your mash to be. </p>

<p><em>Serves 4</em></p>
<p><b>Ingredients</b></p>
<p>50g peeled sesame seeds<br />
400g carrots<br />
700g broccoli<br />
300g leeks<br />
4 sticks of celery<br />
3 tbsp rape seed oil<br />
Himalayan crystal salt or celtic sea salt<br />
Fresh ground pepper</p>
<p><b>Instructions</b></p>
<p>Roast the sesame seeds in a frying pan without using any oil at low heat until golden brown. Stir occassionally. </p>
<p>Peel the carrots, clean them and cut into thin pieces. Cut off the flower heads from the broccoli stalk. Peel the stalk and cut into small pieces. Wash the broccoli flower heads.</p>
<p>Remove the outer leaves of the leeks, cut off the end parts and the dark green leaves. Cut each leek into halves, wash them thoroughly and cut them into strips. Remove the leaves, end parts and hard strings of the celery sticks, wash them and cut them into thin slices. </p>
<p>Either gently steam the carrots, celery and the broccoli or bring water to the boil in a large pot with a pinch of salt and quickly blanche the vegetables in boiling water for about 3 minutes. Put the vegetables into a colander, briefly pour cold water over them and drain the water. </p>
<p>Heat the oil in a large frying pan or Wok. Add all the vegetables and stir-fry them at medium heat for about 5 minutes. Season with salt and pepper and sprinkle the roasted sesame seeds over the dish.</p>
