Okra with Coriander and TomatoesThis is a wonderful recipe which contains three of my favourite ingredients – Okra, Coriander and Tomatoes.

Okra is often combined with tomatoes and mild spices in various parts of the Mediterranean and is also an integral part of Indian, Middle Eastern, Caribbean and southern US cuisine.

Okra is not yet popular and widely known in the UK, so if you have not cooked with it yet then I can really recommend to give this delicious dish a try – you might discover a new vegetable favourite!

Alkaline Recipe #54 Tomato, Rice & Cumin Soup

Hey gang

This is a new one for me and it is DELICIOUS. It is so quick and easy too. The cumin is so delicious combined with the tomato and the rice adds a wicked texture. It is filling and warming on a cold winter’s day.

Tomato, Rice & Cumin Soup

Serves 2

Tomato Cumin Soup
Ingredients

?½ medium onion
2 garlic cloves, crushed
1 tsp of coconut oil
1 tsp ground cumin
85g brown basmati rice or wild rice
2 tins of chopped tomatoes
290ml yeast free vegetable stock
small bunch parsley, chopped
sea salt and ground black pepper
4 tbsp olive oil
