<p>Avocados are incredibly healthy and alkalising and provide our bodies with six times more energy than sugar and proteins. They are rich in potassium, B vitamins, as well as vitamin E and vitamin K. </p>
<p>The avocados combined with the other highly alkalising vegetables like spinach and tomatoes make this soup very tasty and refreshing. </p>
<h2>Raw Avocado and Tomato Soup</h2>
<p><em>Serves 2</em></p>
<p><b>Ingredients</b></p>
<p>3 avocados<br />
3 tomatoes<br />
2 handfuls of fresh spinach<br />
2 tsp freshly squeezed lemon juice<br />
A pinch of Himalayan Crystal Salt or Celtic Sea Salt<br />
Freshly ground pepper<br />
A small amount of water (depending on how liquid you like the soup to be)</p>
<p><b>Instructions</b></p>
<p>Cut the tomatoes into small pieces. </p>
<p>Put all the ingredients apart from the tomato pieces into a mixer. Mix well on the highest setting.</p>
<p>Pour the soup into a soup bowl and add the tomato pieces. </p>
<p>That&#8217;s it! </p>
<p>Enjoy this healthy and alkaline soup! </p>

<p>Okra is often combined with tomatoes and mild spices in various parts of the Mediterranean and is also an integral part of Indian, Middle Eastern, Caribbean and southern US cuisine. </p>
<p>Okra is not yet popular and widely known in the UK, so if you have not cooked with it yet then I can really recommend to give this delicious dish a try &#8211; you might discover a new vegetable favourite! </p>
<h2>Okra with Coriander and Tomatoes</h2>
<p><em>Serves 4</em></p>
<p><b>Ingredients</b></p>
<p>450g ripe tomatoes (if there are no ripe tomatoes available you can replace them with a 400g can of chopped tomatoes)<br />
450g fresh okra<br />
3 tbsp olive oil<br />
2 onions, thinly sliced<br />
2 tsp coriander seeds, crushed<br />
3 garlic cloves, crushed<br />
Finely grated rind and juice of 1 organic lemon<br />
Himalayan or celtic sea salt and ground black pepper</p>
<p><b>Instructions</b></p>
<p>If using fresh tomatoes, plunge them into boiling water for about 30 seconds, then put under cold water. Peel away the skins and chop the tomatoes.</p>
<p>Trim off any stalks from the okra and leave whole. Heat the oil in a deeper frying pan and gently fry the onions and coriander for about 3-4 minutes until the onions begin to soften.</p>
<p>Add the okra and garlic and fry for 1 minute. Gently stir in the tomatoes and simmer gently for about 20 minutes, until the okra is tender. Stir occassionally. </p>
<p>Stir in the lemon rind and juice and add salt and pepper to taste. </p>
<p>Serve warm or cold. </p>

<h2>Tomato, Rice &#038; Cumin Soup</h2>
<p><em>Serves 2</em></p>

<b>Ingredients</b></p>
<p>?½ medium onion<br />
2 garlic cloves, crushed<br />
1 tsp of coconut oil<br />
1 tsp ground cumin<br />
85g brown basmati rice or wild rice<br />
2 tins of chopped tomatoes<br />
290ml yeast free vegetable stock<br />
small bunch parsley, chopped<br />
sea salt and ground black pepper<br />
4 tbsp olive oil</p>
<p><b>Instructions</b></p>
<p>Cook the brown rice as per the instructions on the packet. When this has nearly finished cooking, chop all of the vegetables as per the instructions above and then lightly sautee the garlic and onion (but don’t let anything go brown!) in a large saucepan.</p>
<p>Now throw in the cumin and tomatoes, rice and stock and cook for another 6-8 minutes.  Season to taste, add the parsley, serve in nice big bowls and drizzle with olive oil!</p>
